Make Ahead Freezer Crock Meal Hand Out from RS Night

With this list below you will have Garlic Honey Chicken, Beef Burritos, Chicken Fajitas, Hawaiian Chicken, and Teriyaki Pork Chops.
 
Shopping List
2 Lbs London Broil
5-6 Lbs Chicken
4 Pork Chops (about 1 inch thick)
Brown sugar
White sugar
White vinegar
Garlic cloves - 12
Soy sauce
Large can of pineapple chunks
Onions 1 large or 2 small
Whole peppercorns
Apple cider vinegar
16 oz plain tomato sauce
1 chipotle pepper (you can buy a small can and freeze the leftovers)
Chili Power
Ketchup
Honey
Chicken broth
Peppers (Your choice for the Chicken Tacos)
Taco seasoning
Paprika
You will need more ingredients, but you just need the ingredient above to make your bags.
First take 5 large freezer bags. Grab a Sharpie and label each bag. You should also write the
instructions on the bag. Cut up the onions - half slices and half diced, cut up the peppers, and peel the garlic (You can dice the garlic as you fill up your bags).
Go through and add all the meats to the bags. Then go back and add the rest of the  ingredients. (You can fill them up in any order, this was just my preference.) Lay them to freeze so the frozen food will fit in your crock pot. Take them out in the morning and cook according to the instructions.
 
Crock Pot Hawaiian Chicken (4-5 servings)
● 2-3 large boneless, skinless chicken breasts
● ½ cup white sugar
● ½ cup vinegar
● 3 garlic cloves, minced
● 2 Tablespoons soy sauce
● ½ cup of pineapple juice (use what’s in the can)
● ½ can of large pineapple chunks
 
Instructions
1. Add all the ingredients to a freezer bag.
2. When you are ready to prepare your meal, dump all the ingredients in your crock pot and cook 4- 5 hours on high or 6-7 hours on low.
3. Serve it over rice and enjoy. While I am cooking the rice I like to shred the chicken and put it back in the juice before I serve it.
 
Beef Burritos (6 servings)
● 1 London Broil or top round roast (about 2 lbs)
● 1 diced onion
● 4 garlic cloves, minced
● 2 tablespoons whole peppercorns
● 2 tablespoons apple cider vinegar
● 2 (8 oz) cans tomato sauce
● 1 chipotle pepper in adobo sauce – Use just 1 pepper!! (It’s in a can.)
● 1 ½ teaspoon chili powder (you can adjust this according to your taste)
 
Instructions
1. Add all the above ingredients into a freezer bag.
2. When you are ready to cook the meal, dump the contents of the bag into the crock pot and cook on high for 4-5 hours or low for 6-7 hours Cook on high for 4-5 hours or low for 6-7 hours.
3. When the meat is cooked, you will need to strain the juices and add the juice back to the slow cooker. (You want to remove the peppercorns and onions.) Shred the meat and add back to the juice in the slow cooker for about 30 minutes. This is one of our favorite recipes. My kids eat it as long as we have leftovers.
 
You will also need:
● 16 burrito sized flour tortillas
● Anything else you like on burritos – cream, cheese, lettuce, tomatoes, etc.
We also like to add Cilantro Lime Rice to our burritos. All you need to do is make some white rice and add lime juice, cilantro, and salt.
 
Garlic Honey Chicken (4-5 servings)
● 1 ½ to 2 pounds boneless, skinless chicken breasts
● 3 garlic cloves, minced
● ⅓ cup soy sauce
● ⅔ cup ketchup
● ¼ cup honey
(Feel free to double the sauce if you like extra sauce)
 
Instructions
1. Add all the ingredients to a freezer bag.
2. When you are ready to cook this meal, dump all the ingredients in your crock pot and cook 3-4 hours on high or 5-6 hours on low.
 
Teriyaki Pork Chops ( 4 servings)
● 4 pork chops, about 1-inch thick
● Salt and pepper to taste (you can sprinkle them before you add them to the bag.)
● 2 cloves garlic, minced
● 2 tablespoons brown sugar
● ¼ cup soy sauce
● ⅓ cup chicken broth
 
Instructions
1. Add the pork chops, garlic cloves, brown sugar, and soy sauce, and chicken broth to the freezer bag.
2. When you are ready to cook this meal, dump the ingredients in your crock pot and cook on high for 4-5 hours or low for 6-7 hours. 
We ate this with mashed potatoes.
 
Chicken Fajitas (5-6 servings)
● 2 peppers (your favorite)
● 1 onion
● 1 1/2 pound chicken breast
● 1/2 cup chicken broth
● taco seasoning packet
● 1 tsp. chili powder
● 1/2 tsp. paprika
● 1 tsp. salt
You will also need tortillas, cheese, cream, etc.
 
Instructions
1. Put all the ingredients in a large freezer bag. (Make sure you label the bag with instructions.)
2. When it’s time to cook it, dump it all in your slow cooker and cook on high for 3-4 hours or low for 5-6 hours.
3. When it’s cooked, shred the meat and add it back to the pepper mixture and serve on warm tortillas and your favorite toppings.

Recipes from Relief Society Night

Chili Corn Bread Recipe
Ingredients:
2 Cans Chili
Cheese
Cornbread Mix (and ingredients to make the cornbread)

Put the Chili in a 9x13 Pan
Sprinkle with Cheese
Top with the Cornbread mixture
Cook to the Cornbread directions
Enjoy!
 Cookie Recipes (all made with Cake Mix): 
 
Yellow Cake Mix Cookies
1 Box Yellow Cake Mix
1/3 Cup Oil
2 Tbs. Water
1 Egg & 1 Egg White
1/2 Bag of Toffee Chips
·         Preheat oven to 375 degrees F.
·         Mix cake mix, oil, water, egg, and egg whites together in a mixing bowl. When mixture is doughy add toffee chips.
·         Roll dough into small balls and put on to cookie sheet.
·         Bake 8-10 min.

Chewy Lemon Cookies
1 Lemon Cake Mix
2 Cups Whipped Topping
2 Eggs
Powdered Sugar
·         Mix together cake mix, whipped topping, and eggs. Refrigerate 2 hours.
·         Preheat oven to 350 degrees F.
·         Lightly grease a cookie pan. Roll cookie dough into small balls, and then roll balls in powdered sugar. Space balls evenly on cookie sheet.
·         Bake 6-8 minutes. Remove from pan and cool.
 
Quick and Easy Peanut Butter Cookies
1 Yellow Cake Mix
2 Eggs
1/3 Cup Oil
3/4 Cup Crunchy Peanut Butter
Sugar
·         Preheat oven to 350 degrees F.
·         Mix together cake mix, eggs, and oil until powder is completely dissolved into dough. Stir in peanut butter.
·         Drop balls of dough into a small bowl of sugar, then place on a greased cookie sheet. Press fork horizontally and then vertically across each ballot flatten.
·         Bake 10-12 minutes, or until golden. Remove from pan and cool.
 
Reese’s Cookies
1 Chocolate Cake Mix
2 Eggs
1/3 Cup Vegetable Oil
1 Bag Small-Size Reese’s Peanut Butter Cups
·         Mix together cake mix, eggs, and oil in a bowl until all the cake powder is absorbed.
·         Place a peanut butter cup in the center of a ball of dough. Make sure the cup is completely covered with dough.
·         Bake cookies 8-10 minutes, or until done. Remove from pan and cool.

January RS Night: Helpful Couponing and Meal Planning Tips

We started off the night by eating yummy food which recipes will be provided in a separate blog post!

Kristina's Helpful Tips:
  • The Food Nanny Website (http://www.byutv.org/foodnanny/) allows you to plan your nightly themes, weekly meal plans, recipes and grocery lists all with just a click of your mouse, and its all free!
 

Kayleen's Helpful Tips:

  • Collect the Coupons that come in the Sunday paper and if you don't get the Sunday paper, ask someone who does to have their coupons
  • If you like to shop at Target always check Target online for extra coupons.  Target will let you use one manufacture coupon and one Target coupon per item, so savings can add up quickly.  Target also has an app for those with smart phones who don't want to cut coupons and can just take them on your phone instead.
  • Go through each Grocery add and write down which stores have the best prices so you know where to get the best deal
  • Sometimes buying in bulk is still cheaper than buying single items with coupons.  Do you homework and know what a good price for an item is.  You might think getting a can of vegetables for $1.00 with a coupon is a good price, but then at Costco without a Coupons you can get 10 for $7.00, so it would still be cheaper to buy in bulk rather than use a coupon.
  • Keep a folder in your car of store coupons such as Bed Bath and Beyond and any Fast Food or Restaurants coupons you have, since you never know when you are going to be in a hurry have to ran and get take out.
  • Bed Bath and Beyond coupons never expire and they will let you use more than one in a transaction.
  • Sign up for Birthday Clubs online to get a free meal on your birthday at your favorite places.
  • Always check the clearance aisle, even in the grocery store.  Sometimes you can find a good deal.
  • "If Honey Boo Boo's Mom can coupon, then so can you!"

Sharlene's Helpful Tips:
  • Deals to Meals (http://www.dealstomeals.com/) is a website which reviews all the adds and will tell you which stores have the best prices.  You do have to pay $5 a month for it's services but you can try it for a 2 week free trial period to see if you like it or not.
  • Know your prices, do your research so you know what actually is a good deal and what isn't
  • Know how many times a week you are actually going to have a home cooked meal, freezer meals and also eat out and then plan accordingly
  • Write in your cookbooks so if you liked something or didn't something you can remind yourself the next time you open to that recipe. 
  • Plan you meals ahead of time.  When you organize your dinners you will have a smoother day.  Organization and planning are essential!
  • Plan your meals around what's on sale.
  • Make sure you have a shopping list and stick to it
  • Buy a lot/Stock up when items are on sale
  • Double your recipes when you can and then zip-lock/freeze them for later use (like waffles)
  • Wednesday is double add day at Sprouts which is where she prefers to buy her produce and meats
  • Grow a Garden!  Then eat what you harvest and if you don't like something you harvest then barter with your family, friends or neighbors who also have a garden.  For example, she has an avocado tree and her whole family hates avocados

The Ward's Helpful Tips:
  • When you go shopping leave your husband at home
  • If you know ahead of time you won't have time to chop/peal vegetables or shred cheese then buy vegetables already ready to be cooked and shredded cheese to help save you time.
  • Know what the "staples" are for your cooking/meals that way you can options when you look into your pantry trying to decide whats for dinner.
  • Don't buy things you won't eat
  • Buy cookbooks you will use more than just a few recipes out of
  • Freeze a lot of things so you can buy in bulk and then save for later
  • You can freeze anything, such as: marshmallows, chips, meat, shredded cheese, Costco cake, Quaker oats, chocolate chips, cream cheese (but it won't spread well afterwards), etc.
  • Teach your kids how to grocery shop and cook
  • Rotate your freezer so you don't find things that have been in there for over 40 years like one Relief Society Sister
  • Save money and put it aside every time you get money so you can save up for something big.
  • When you buy things like buttermilk for a recipe that you know you won't use the rest of before it goes bad, then freeze it in measurements needed for your recipe so you can just take it out of the freezer and pop in your recipes in the future
  • Buy meat in bulk and then portion size it in smaller bags/containers for single meals
  • Stir away from brand names, you can usually get the same food for a lot less just by not spending the money on the brand name
